Mexican salad with black beans

This is a much more noutritious version of the Bulgarian Shopska Salata. Black beans are high in protein, iron, magnesium, folate, potassium and a lot of fiber. Studies show that black beans improve intestinal health, help in the prevention of cardiovascular disease, regulate blood sugar levels, help with weight loss. Avocados and olive oil provide the beneficial omega3 and omega9. Because of the balance of protein, carbohydrate and fat, this salad is very satisfying and is the perfect lunch or dinner.

1 tomatoe

1 bell pepper

1/4 red onion

1 cucumber

1/2 avocado

1 can of black beans or 200g of home cooked black beans

1 small can of corn (optional)

cilantro or parsley

lemon juice

olive oil

salt to taste



Cut everything is small pieces. Season with lemon, olive oil and salt.
